Sift 7 cups flour and use just enough of it to dredge 21/ cups currants or seedless raisins, 5 cups seeded raisins and 1 pound chopped citron. To the remainder of the flour, add 1 teaspoon soda, 6 teaspoons cin- namon, 1 teaspoon mace, 3 tea- spoons cloves, 8 teaspoons salt and 2 teaspoons baking powder. Sift this mixture into the short- eni»g, sugar and egg mixture al- ternately with 2 cups milk and i,~~ cup molasses. Just before put- ting the cake into the pan, fold in the fruit which has been dredged witl: flour and 1 pound almonds. The cake is steamed for 2 hours and then baked in a very slow oven until cooked, or for about an hour The oven must be very slow to keep the cake moist. After the cake is taken from the oven, al- low it to cool. Then it is wrap- ped in oiled paper and put in tne bottom of a stone jar. If the cake is to be kept for a year it is put in the jar and covered with sugar instead of being wrapped in the oil paper. Wipe pork, sprinkle with flour and seasoning, put in very hot baking pot in which fat has been melted, turn until brown on all sides, reduce heat, cover and cook 1 hour. Stuffed Pork Chops Have your meat dealer eut the pork chops about 1 inch thick. Then make an incision on one side. The cut should be deep enough to hold at least 1 or 2 tablespoons of your favorite dressing. AVipe the chops with .". damp cloth, open the pockets, season with salt and pepper and stuff with your favorite dress- ing. Sew or sk wer the opening. Either fry in a skillet or roast in the oven. If they are to be frienl use a large skillet and a tablespoon of bacon drippings. Melt the drippings, add the chops and sear on both sides. Brown slightly, cover and let cook slowly 45 minutes. Turn frequently. If the chops are to he baked, place the pan in a hot oven. Cook for 20 minutes', then reduce the temperature of the oven a little. Add 1 onion sliced and i,'up boiling water and bake 1 hour, basting frequently. About 15 minutes before they are served, season with salt and pepper to taste. First Meeting Under New Officers The first. meeting of the Rate- p~yers Association under the rewly elected officers will ~be held at the Ambleside Hall next Tuesday evening, April 2nd. President S. Owing to rapid changes and developments in the Municipal- ity, it has been decided to give the whole of Tuesday evening to a general discussion of matters affectng Transportation. Recently a prominent delega- tion of residents from the AVest End of the Municipality ap- proached the Council on this problem, considerable changes having taken place, with the el- imination of the P. G. E. The future status of the Municipal busses and f rries also presents possibilities of a most interest- ing nature. It is expected that a large number of residents from all sec- tions of the i4Iunicipality will be present at the meeting, and it is hoped that it may be possible'or the Reeve and Council to be present, and to volunteer such information as they are well qualified to give. It is also ant- icipated that a full and free dis- cussion will be heard, and that many ratepayers with construc- tive suggestions to offer will voice their opinions. A cordial invitation is extend- ed to all residents to join in the membership of the Association; and to take part in the discus- sion at the meetings, which are to be held on the first Tuesday of each month. The Executive Committee has proposed a most interesting seri- es of meetings for the year. The City Council will now ascertain whether it may proceed with the completion of an agreement with the power company to authorise installment of necessary equip- ment to give residents of the city a supply of gas for domestic purposes, independent of the dis- trict. Reeve J. M. Fromme and May- or G. H. Morden have been ap- pointed by the two councils as representatives on the special committee of the Board of Trade having in hand negotiations with the Harbor Board relative to ob- taining a reduction in freight rates and switching charges for North Shore industries. Last Saturday afternoon at Windermere Park the junior football team was eliminated from the main cup tie series, be- ing defeated by the heavier and faster First United team 3-0. The team plays Saturday in the Consolation Cup tie series. Rub the fat with 9& teaspoon dry mustard, sprinkle with powder- ed sage, pepper, salt, bread crumbs and finely minced green pepper and onion. Dust lightly with brown sugar. Return to the oven and continue baking. Haste frequently, allowing 20 to 25 minutes to the pound. An 8- pound roast requires about 8 hours to roast. Serve with gooseberry jam or tart apple sauce.
