The late Mr. Archibald, father of the groom, was in the real estate business in West Vancou- ver in the early days of the municipality, his office being lo- cated on Marine Drive at Holly- burn. To get jam of the proper jelly like consistency, we need the all- important pectin which overripe fruit lacks, so unless commercial pectin is used part of the fruit must be slightly underripe. 1. Prepare the fruit. Wash, peel, and core such fruits as ap- ples;tnd quinces. Remove pits fi'om pitted fruits. Cut in small pieces or, in the case of berries,: mash. 2. Add just enough water to keep the fruit from burning, anil cook until tender. 3. Add sugar. For best results use i/ to ",'i. of a pound of sugar to each pound of fruit. 4. After adding the sugar con- ) tinue to cook the mixture as rapidly as possible. It will need constant stirring to prevent burning, especially after the sugar has been added. Cook un- til it has a jelly-like consistency. Remember that jam thickens a little on cooling. 5. Pack jam in hot, sterilized jars and s.al, Jam packed in glasses is more apt to mold than is jelly; therefore jars are safer. Store in a cool, dry place. Subject: "Is Healing in the Atonement?" AIayonnaise Mayonnaise holds a niche aii its own in the salad-dressing ivorld. It is appropriate vvith ai- most all vegetables, with meat Ior fish, and with cream added it makes a pleasing dressing for a fruit salad. 1 Egg Yolk 1 Cupful Salad-oil 1/ Teaspoonful Salt 2 or 3 Tablespoonfuls Lemon- Ju&ce or Vinegar. 1/4. Teaspoonful Paprika. The materials should be chill- ed, but not ice-cold. Mix the mayonnaise in a bowl, with a silver fork if you do not possess a mayonnaise-mixer. First beat the yolk thoroughly, stir in the well-mixen'easonings and 1 tea- spoonfu I of the lemon-j uice or vinegar. Add the oil from a tea- spoon, a few drops at a time, beating well until the mixture begins to thicken. As it thick- ens add the oil more rapidly, but take cave not to add more than you can readily mix with the egg. EVhen stiff thin with the acid, and add oil and acid alter- nately until all has been used. The dressing should be stiff enough to hold its shape. If the mayonnaise should curdle beat aniother egg yolk in a bowl and beat the dressing into it as you did the oil. More oil and lemon mav be added to the original egg yolk if you wish a larger amount of dressing. There are many ways to vary plain mayonnaise to suit your needs. One is to add 1-8 tea- spoonful of d vy mustard, 1/q, teaspoonful of sugar, and &/& tea- spoonful of Worcestershire sauce to tl'.e recipe for plain mayon- riaise. A simple Russian dress- ing is made by blending togeth- er i, cupful of thick chilli sauce, 1 tablespoonful of EVorcester- shiv.e sauce, and 1 cupful of thick mayonnaise. Thousand island dressing uses 1 cupful of thick mayonnaise, 2 tablespoonfuls of finely chopped green pepper. 2 tablespoonguls cf finely chopped red pepper 4 tablespoonfuls of chilli sauce, 2 tablespoonfuls of catchup, 1 tea- spoonful of paprika, and 1 table- spoonful of chives. This dressing is particularly appropriate to serve with hearts of lettuce.
