AIEN'S CLUB PROPOSED FOR UNITED CH URCH r" Preliminary meetings of the men of )Vest Vancouver of the United Church have been held recently at which it was decided to organise a men's club of the United Church under the follow- ing Constitution: The name shall be The Men' Club of West Vancouver United Church. The objects shall be 1 ~ The association of the men of the church for mutual ac- quaintance and sociability, 2. Inviting men to the church and interesting them in its ac- tivities and tasks. 3. The placing of the man power of the church behind the organization. 4. The furtherance, in all pos- sible ways, of the highest wel- fare of the church and commun- ity. 5. The securing of competent speakers to address the men on topics of vital interest. The club shall meet on the first Tuesday of each month from Oc- tober till May, inclusive. The officers shall be. Presid- ent, Vice President, Secretary- Treasurer. Executive Commit- tee of the officers, Convenors of Committees and two other mem- bers chosen at the annual meet- irjg of the club. The Hon. President shall be the minister of the church. The fee shall be one dollar a year. The membership shall consist of all men who are in sympathy with the objects of the club and who pay the annual fee. They shall be entitled to vote at the meetings of the club. The Constitution may be a- mended on a two-third vote of the members after a month's notice of the proposed amend- ment. REV. H. P. R WILLIAMSON Cheese Cake Pastry. one cup cottage cheese one-half cup cream, four eggs, two tablespoons sugar, one-four- th teaspoon salt. Line a pan with pastry. Mix other ingredi- ents, fold in stiff egg whites last. Glaze crust with slightly- beaten egg whites and bake in hot oven 10 minutes, then mod- erate 20 minutes. Instead of pastry, crushed zwiebach or corn flake crumbs may be used. Dixie Biscuit One pint flour, two teaspoons sugar, one teaspoon salt, one tea- spoon baking powder, three-four- ths cup shortening. Enough milk to make stiff dough. Blend flour and sho&tening, sugar, salt, baking powder until thoroughly mixed. Add enough cold milk to make stiff dough. Roll out, cut in squares, prick with fork and bake slowly about thirty minutes Potato Soup Two and one-half cups raw po- tatoes, one quart milk, one-half onion or one-half teaspoon onion salt, one-eighth teaspoon celery salt, two tablespoons flour, three teaspoons butter or substitut4( p~pper. Put the milk in the up- per part of a double boiler and add the sliced onion or onion salt to it. Put in the celery salt and green pepper, if desired. Let this milk heat above hot water for a half hour. This heating brings out the flavor of the onion and celery salt and flavors the milk without giving an un- pleasant strong taste. Peel the potatoes and cut in small pieces. Cook in boiling salted water. AVhen the potatoes are soft, rice back into the pan. We are assuming that the water in which the potatoes have been boiled has all been absorbed so that there is no waste of mineral salts. Add the strained hot milk tc. the potatoes. Mix well. Blend the butter and flour over the fire and add this roux to the potato milk mixture. It should immed- iately thicken the liquid. Let the mixture boil and then season to taste. Three snlall potatoes one pint milk, one teaspoon chopped onion stalk celery, one-half teaspoon salt, one-half teaspoon celery salt, pepper to taste, a speck of cayenne, one-half teaspoon flour, one teaspoon butter. Boil pota- toes until soft, drain and mash. Cook onion and celery in milk, add to mashed potatoes, rub through strainer, boil again. thicken with flour and butter, mixed. Season. Boil five minut- es and serve. If too thick this may be thinned with more milk. Sparerib Pie Wash and cut two pounds of sparerib in pieces, put in kettle with one quart of water, two medium-size onions cut in pieces. Add salt and pepper to taste. When meat is nearly cooked, add four medium-size potatoes quar- tered. Let this cook while you make a crust of one quart of flour, four teaspoons of baking powder, one teaspoon salt and one tablespoon butter. Add one- half pint milk. Mix and roll out one-half inch thick. Thicken stew and pour into a baking dish, cover with crust and bake in oven for about thirty minutes.
