Then add four crackers, rolled; two beaten eggs, spice to suit the taste, and one cupful of chop- ped raisins. Lemon-Apple Pie Grate the rind and strain the juice of tivo lemons. Core, pare aild chop fine one large, tart apple. Pound one soft cracker very fine. Melt two teaspoonfuls of butter and miz with the crack- er crumbs. bliz the lemon rind «nd juice ivith the chopped ap- ple and stir with them txvo level cupfuls of sugar. Beat the yolks of tsvo eggs to a thick froth and beat the whites to stiffness, then beat both together. Beat these with the lemon, apple and sugar. Mix the buttered crumbs with all. Cover pie-plates; put a broad brim around their edges, and fill as tarts with the mizture. Bake d'or twenty minutes, or until the crust is done. Orange pie is made in exact- ]y the same way but with less sugar. Pudding Crusts Pie paste is a suitable cover for boiled or baked fruit pud- dings. Potato crust for boiled fruit puddings is made as follows: Roi) and mash three or four good potatoes. Mix two cupfuls of sifted flour with two cupfuls of potato. Use a chopping knife so as to keep free from clogging. Chop in one cupful of butter and one teaspoonful of salt. Mix to a paste with very cold water. Gatehr into a heap, without molding, on to the pieboard, to roll out. Puddings should be boiled in a cloth. The opening of the tenders was made with the rep- resentatives of the bridge comp- anies present. In both instances there were tivo bids submitted by the comp- anies. The western Canada Structural Steel and Bridge Company, Vancouver, offered to do the work for $46,074, or, if a certain railing were called for, an additional price of $355, mak- ing the second bid $46,429. The Dominion Bridge Co. Ltd., put in two bids, determined upon the time for the taking over of the sub-structure and the length of time for completing the work. Bid A was for $ 58,675, depend- ent upon the substructure being ieady to be taken over on Sep- tember 15 and allowing three weeks to complete. Bid B was for $54,171 with an optional date for taking the substructure over and allowing five weeks for the completion of the work. The tenders will be gone into by the officials of the depart- ment before the contract is a- warded. The B. C.
