Break up the chocolate, put it into a small pan. place this in a larger pan of boiling water over gentle heat, and stir ivell with a wooden cpoon or spatula. On no account let any ivater splash from the eut r into the inner pan. Do not let the chocolate become too hot or it (vill look dull, but remove the pan from the hot ivater oc- casionally. IVhen the chocolate is quite smooth dip the raisins in one by one, remove with a fork, and place on ivax paper to dry. Press half an almond on each. Isv Glace Icing One and one-half cups of icing sugar; two large tablespoonsful of ivater: a dessertspoonful of lemon juice. Rub the icing sug- ar through a sieve. Put it into a saucepan with the lemon juice and ivater. Stir over very gentle heat until sugar has melted and the syrup just warm. Stir in any coloring or flavoring you may ivish. It is then ready for use. Angel Cake with Orange Icing Beat the ivhites of eight eggs ful of cream of tartar and beat until foamy; add half a teaspoon- until dry, then, gradually, heat in one cup and a half of fine granulated sugar (if coarse sug- ar is used the result will not be satisfactory), then fold in one cup of sifted flour. Bake in an unbuttered angel cake pan in a slow oven for one hour. After baking 45 minutes cover with paper to avoid a dark brown col- or. Remove from the pan and cover with orange icing. To make the icing, grate the rind of one orange and let it soak in the juice of one-half a large orange for thirty minutes, strain through a fine wire sieve, add, gradually, the yolks of two eggs beaten light, two teaspoonsful of lemon juice and enough con- fectioner's sugar to make an ic- ing that will not run.
